La Sastrería
Founded in May 1990 in Talavera de la Reina, La Sastrería is a legendary and cozy establishment, designed like an English pub, offering a calm and relaxed atmosphere that pays attention to every detail of the ambiance with its lighting and music.
At La Sastrería, you can enjoy an extensive menu of classic and signature cocktails, as well as a wide variety of selected Premium spirits. Your drinks are custom-made, and it is also an establishment specializing in rums, whiskies, gins, vodkas, tequilas, and mixes.

Domingo Martín Fraile, owner of La Sastrería, tells us more about the establishment:
What inspired you to create La Sastrería?
The products of my land, their history, and a lot of testing before finding what I was looking for in aroma, flavor, and decoration. I approached it as a project for the World Class Competition.
Do you remember your first menu? How many cocktails did it feature? And the current one?
Yes, I remember it because it is the foundation of all the others; it had 8 cocktails, all classics. The current one features around 50 cocktails, 12 of which are signature creations that I change depending on the season and available products.
Which two cocktails from your establishment can you recommend?
Achaman and Quixote Mahalo. These two cocktails took me a long time to develop, and in the end, they yielded excellent results, earning them awards.

What are the essential considerations for creating a space, the fundamental aspects of the establishment?
Order, balance, ambiance, and a delicate selection of spirits to make people feel comfortable. You have to pay attention to the smallest details, as that is where the difference is made. And most importantly, you must love what you do, because that is what you transmit to the customers.
Any interesting anecdotes about your customers?
The unusual combinations they request and how they ask for them. We need a lot of psychology to understand customers sometimes.
What cocktails do people who visit the establishment like to drink?
Those who let themselves be recommended, but especially the classics, perhaps because my cocktail bar is very classic-oriented, as it is my style and what I enjoy making.

Once all this passes, how do you see the market?
I believe it will grow, but very slowly, and many businesses will close. Those that survive will have to adapt significantly to the situation and the times; there will be no choice but to reinvent themselves. You have to be very creative and specialize in something. This is one of the keys for a business to prosper. The big problem I see is the trivialization of the sector; I see a great lack of professionals due to the 'anything goes’ mentality.
